Oculus Rift Users - some questions for you
While using the OR, the video card renders on the desktop, which is mirrored into the headset. Have any of you tried to just have it rendered directly to the headset and not directly to the monitor and redirected to the headset? If so, how did you accomplish that and did you benefit from it? Id like to get rid of some stuttering, and if its rendered into 3 different monitors at the same time, then the performance increase should be enough to reduce lag and latency. If you've any suggestions, Im all ears. I dont feel like Im getting the most out of it with the SDK tool provided by Oculus. The OR res is 2160×1200, desktop is 3280x2160 (but is rendered at 2160x1200 on desktop), so using DSR should be a viable method to get better anti aliasing and performance out of the headset.

Rendering of content on certain screens is a function of the API's used by the game developers. There's not a lot you can do yourself to change this.
DCS, 'Mirrors' you left eye from the oculus onto other screens. Being as this scene is only being rendered twice (once per eye) and one of these is 'repeated' on multiple screens, it actually has very little impact on performance.
Other scenarios are possible. Project CARS for example renders a VR view in your rift only, and a standard low resolution (1280x720) 2D view to your desktop. This works really well as it allows you to put a friend in the rift and to manipulate the environment on the desktop, setting up the car, race settings, and so on without having to look at the fish eye'd Oculus mirror view. This mode however will have the largest impact on performance as it is rendering 3 independent scenes, once per eye and once for the monitor. I personally would like to see an option for this in DCS as it gives you a VR and a desktop to use for the Mission Editor, recording videos, etc without having to enable / disable the rift all the time which is a P.I.T.A.
Assetto Corsa takes another approach. It renders the scene on your desktop only whilst your in the menu's, but as soon as you start a race session, it switches to the Rift only. This should in theory give you the best performance as it is only rendering the scene twice (once per eye) with no mirror at most.
Ultimately though, as I said this is up to the developer to implement how they see fit, and potentially provide options to the end user of how they wish to utilize the available options.

Ok, how about working with DCS in full screen rather than a partial screen? I take it that the desktop displayed version is the exact same as the OR version, but with the added disadvantage of being able to run the mouse off of the focused window.

Putting it in Fullscreen does stop the mouse 'skipping' out of the DCS Window, but that's about it.

I use the 'Confine Cursor to Game Window' option under the 'VR' tab without fullscreen and haven't had an issue with the mouse skipping out of the window.

putting it in full screen seems to be the best bet for this, it still jumps out of the window ever so slightly when it does and you'll click something to lose focus on the window.
